Macaroni & Cheese

Preheat oven to 375°F

  • 2000 g macaroni

Cook pasta al dente.

  • 2 23 cups (605 g) butter

Melt butter in saucepan.

  • 2 23 cups (333 g) all-purpose flour

Add flour, stirring together to make a roux.

  • 20 cups (4.74 kg) milk

Slowly add milk, ensuring that the consistency stays thick.

  • 4 onion, finely diced
  • 4 tsp. dijon mustard
  • 2400 g grated cheddar cheese
  • 2 tsp. (12 g) salt
  • 1 tsp. black pepper
  • 12 tsp nutmeg

Stir in onion, cheese, mustard, nutmeg, salt, and pepper.

Combine sauce with pasta.

  • 600 g grated cheddar cheese

Sprinkle cheese on top.

  • 3 cups (372 g) bread crumbs
  • 8 Tbsp (114 g) butter, melted

Toss butter and bread crumbs together and then sprinkle bread crumbs on top.

Bake at 375F for 30 minutes or until golden on top.
