Cornmeal muffins

Perfect accompaniment to chili or BBQ

Makes 12 muffins.

  • 1 12 cup (225 g) cornmeal
  • 2 12 cups (592 g) milk

Combine cornmeal and milk and let sit for 10 minutes.

  • 2 cups (250 g) all-purpose flour
  • 23 cup (133 g) white granulated sugar
  • 2 Tbsp (30 g) baking powder
  • 1 tsp. (6 g) salt

Combine flour, sugar, baking powder, and salt in a large bowl.

  • 2 (102 g) large egg
  • 12 cup (104 g) vegetable oil

Beat egg and mix with oil. Add to cornmeal mixture and mix well. Add wet ingredients to dry ingredients and stir just until combined.

Fill greased muffin cups and bake at 400°F for 15-20 minutes until just golden.
