Banana Muffins

Can substitute butter with margarine

  • 1 cup (227 g) unsalted butter, melted
  • 1 cup (200 g) white granulated sugar
  • 2 (102 g) large egg, beaten
  • 3 cups (375 g) all-purpose flour
  • 2 cups (494 g) mashed banana
  • 1 tsp. (5 g) vanilla extract

Add all ingredients together in large mixing bowl except baking soda and water.

  • 2 tsp. (13 g) baking soda
  • 2 Tbsp (30 g) water, hot

Dissolve baking soda in hot water and add to mixture.

Bake in greased muffin pan at 350 degrees for 20-30 minutes until golden brown.
